Spicy mango mojito

Treat yourself to a refreshing mojito, spiked with hot jalapeños and amped up with a tropical twist of mango juice. Muddled together with ice, sugar, mint and soda water for the ultimate summer's night cocktail.

    Ingredients

    • 1-2 tsp demerara, to taste
    • 2 sprigs fresh mint
    • ½ a fresh green jalapeno chilli, thinly sliced and seeds removed
    • 50ml dark rum
    • 75ml mango juice
    • 100ml soda water, to top up
    • handful ice cubes

    Method

    1. Put the sugar, 1 sprig of mint and a couple of slices of chilli into a tall highball glass and muddle with the end of a wooden spoon or cocktail muddler until the mint is bruised.
    2. Pour the rum and mango juice into the glass and stir until the sugar has dissolved. Add a handful of ice and top up with soda water.
    3. Garnish the mojito with the remaining sprig of mint and a couple more slices of jalapeño before serving.
