    Ingredients

    • 1 x 700g pack minced beef
    • 3 tbsp curry paste
    • handful fresh coriander, chopped
    • ½ tsp chilli flakes
    • 4 burger buns
    • 4tbsp mango chutney
    • 1 small red onion, sliced thin
    • 1 beef tomato, sliced

    Method

    1. In a large bowl, mix the beef mince, curry paste, coriander and chilli flakes (if using). Divide into 6 balls and press firmly to make burgers about 1·5cm (3/4in) thick. Put 2 of the burgers in the freezer to save for another time.
    2. Heat a griddle or frying pan over a high heat and cook the burgers for about 5 minutes on each side, or until they’re done to your liking.
    3. Toast the cut side of the buns, top each with a burger, then add a spoonful of mango chutney, some slices of onion and tomato and the lettuce leaves.
