Method

  1. Make up the pizza base mix to pack instructions. Cover and leave to rise in a warm place for 40 mins or until doubled in size.
  2. Meanwhile, tip the tinned tomatoes into a pan with a little seasoning and bubble over a medium heat for 5 mins. Mash with a fork and set aside.
  3. Preheat the oven to gas 9, 240°C, fan 220°C. Divide the dough into 4 equal pieces, then stretch and roll out each piece on a floured surface to a rough 20cm circle. Transfer the dough circles to sheets of baking paper.
  4. Divide the tomato sauce between the pizza bases, leaving a 1cm border. Cut the reserved tomatoes in half. Top the pizzas with the torn mozzarella, then arrange the tomato halves and peppers on top to look like faces. Brush the dough borders lightly with the extra oil.
  5. Slide the pizzas on their paper onto baking trays and bake, in batches if needed, for 15-20 mins until the pizza crust is set. Meanwhile, toss the lettuce and quartered tomatoes with the lemon juice and 1 tsp oil. Serve the salad alongside the pizzas.
