    Method

    1. Combine the flour, water, olive oil and a pinch of salt in a bowl. Mix until it starts to form a dough.
    2. Lightly flour a board and knead the dough for 2 mins until smooth.
    3. Divide the dough into 4 equal portions and roll each to about the thickness of a £1 coin. Each piece should be at least 25cm in diameter.
    4. In a separate bowl, combine the tomatoes, garlic, basil, along with a pinch of salt and pepper. If you want a smoother sauce, blitz this in a food processor.
    5. Heat a frying pan until piping hot and carefully pop in one of the dough pieces. When the dough starts to bubble and the base begins to slightly crisp, spoon 4-5 tbsp of the tomato sauce on top and spread it all over. Meanwhile, heat the grill to high.
    6. Next, add some red onion and ham to the pizza, along with a few slices of mozzarella, then put the pan underneath the hot grill for 3-4 mins, or until the mozzarella is golden.
    7. Remove the pizza and repeat with the remaining 3 pieces of dough.
    8. Cut the pizzas into quarters and serve with some basil leaves.
