Roast beef salad jar

Method

  1. Preheat the oven to gas 6, 200°C, fan 180°C. Put the potatoes in a roasting tin and drizzle over the oil. Season well and toss to coat. Roast for 25 minutes, or until cooked through and golden. Remove from the oven and leave to cool; halve.
  2. Meanwhile, for the dressing, combine all the ingredients in a small jug with a little seasoning. Cover and set aside, until needed.
  3. To assemble, arrange 4 large jars on a counter. Add a layer of potatoes, followed by a layer of beef, tomatoes, and finally the salad leaves. Drizzle over the dressing just before serving.
