Rise and shine muffins

Who doesn't like a muffin in the morning? These easy breakfast muffins are quick to prepare and bake in under 30 minutes, so you can enjoy them warm from the oven as a treat, or make ahead and freeze for another time.

Ingredients

  • 160ml orange juice
  • 80g honey
  • 2tbsp vegetable oil
  • 2 medium free range eggs, lightly beaten
  • 225g self raising flour
  • 100g Special K, lightly crushed
  • 50g raisins
  • 250g 0% fat natural yogurt, to serve
  • 1 orange, zested

Method

  1. Heat the oven to 180°C/160°C fan/Gas Mark 4. Line a 12 hole muffin tin with paper muffin cases.
  2. Mix the orange juice, agave nectar, oil andeggtogether in a large jug.
  3. In a large bowl combine the flour, 80g Special K and raisins. Fold in the orange juice mixture then spoon into the muffin cases. Scatter with the remaining Special K. Transfer to the oven and bake for 20-25 minutes until golden and a skewer comes out clean.
  4. Meanwhile mix the yogurt andorangezest together and serve with the muffins.
    • Freezing and defrosting guidelines

      Bake according to the recipe but stop before adding decoration. Allow to cool completely. Wrap well in clingfilm and tin foil (to prevent freezer burn) and freeze for up to 3 months.

    • If you wish to add icing or decoration, add it after the baked goods have fully defrosted and are at room temperature.
