Punjabi jeera chicken recipe

Meaning 'cumin' in many South Asian languages, this tasty jeera chicken curry will fill the family fast, a tried and tested recipe written by Maunika Gowardhan. The light gravy is best mopped up with a flatbread, such as naan or paratha.

Ingredients
- 2 tsp cumin seeds
- 1 heaped tbsp Greek-style yogurt
- 600g boneless chicken thighs, cut into bite-sized pieces
- 2 tbsp vegetable oil or ghee
- 5 green cardamom pods
- 200g onions, thinly sliced
- 3 green finger chillies, slit lengthways
- 1 tbsp garlic and ginger paste
- 1 tbsp ground coriander
- 1 tsp ground cumin
- 1 tsp garam masala
- ½ lemon, juiced
- 15g fresh coriander, chopped
- naan or rice, to serve (optional)

- Coarsely crush the cumin seeds using a pestle and mortar. Transfer to a large mixing bowl with the yogurt and chicken. Toss well to coat, then marinate for 15 mins.
- Meanwhile, heat the oil or ghee in a large, heavy-bottomed saucepan over a medium heat. Add the whole cardamom pods and fry for a few secs. Add the onions and cook for 12 mins, stirring well, until lightly golden. Add the chillies and garlic & ginger paste and fry for 1 min.
- Add the marinated chicken and fry for 4 mins, stirring continuously. Add the ground coriander and cumin, cover and cook for 5 mins. Season to taste.
- Remove the lid, stir well and cook for another 5 mins. Once the chicken is cooked through, turn off the heat and add the garam masala, lemon juice and chopped coriander. Serve with naan or rice, if you like.
