Potato salad with herb dressing

Try this fabulous classic side dish with a fragrant herb dressing.

Ingredients

  • 750g (1 1/2lb) potatoes
  • 3 mint sprigs
  • parsley, chopped
  • basil, chopped
  • mint, chopped
  • 2 tbsp non-fat Greek yogurt
  • 3 tbsp reduced fat mayonnaise
  • 85g watercress, tough stems removed

Method

  1. Put the potatoes in a large pan and cover with water. Add the mint sprigs and a large pinch of salt. Bring to the boil and simmer for about 20 minutes, until tender.
  2. Drain the potatoes, discard the mint and set aside until just warm. Halve any larger potatoes.
  3. Mix the herbs, yogurt and mayonnaise in a bowl. Season well. Blanch the watercress for at least 15 seconds in boiling water and allow to cool.
  4. Toss the potatoes, then the watercress, in the yogurt mix. Transfer to a serving bowl.
