Potato salad with herb dressing recipe

Try this fabulous classic side dish with a fragrant herb dressing.

Ingredients
- 750g (1 1/2lb) potatoes
- 3 mint sprigs
- parsley, chopped
- basil, chopped
- mint, chopped
- 2 tbsp non-fat Greek yogurt
- 3 tbsp reduced fat mayonnaise
- 85g watercress, tough stems removed

Method
- Put the potatoes in a large pan and cover with water. Add the mint sprigs and a large pinch of salt. Bring to the boil and simmer for about 20 minutes, until tender.
- Drain the potatoes, discard the mint and set aside until just warm. Halve any larger potatoes.
- Mix the herbs, yogurt and mayonnaise in a bowl. Season well. Blanch the watercress for at least 15 seconds in boiling water and allow to cool.
- Toss the potatoes, then the watercress, in the yogurt mix. Transfer to a serving bowl.
