German-style potato salad with bacon recipe

Try this great German-style potato salad with bacon, mustard and parsley as a side dish for grilled pork or boiled Polish sausages.

Ingredients
- 1kg (2lb) Cypriot spunta or other new potatoes
- 6 slices smoked streaky bacon
- 2 sticks celery
- 1 small red onion
- 125ml (4fl oz) cider vinegar
- 125ml (4fl oz) water
- 2 tsp caster sugar
- 1 tbsp wholegrain mustard
- 2 tbsp flat-leaf parsley, chopped
To serve
- grilled pork or boiled Polish sausages

Method
- Simmer the potatoes in a pan of salted water until tender, about 10-15 minutes. Drain and put back in the pan to dry out. Halve the potatoes, or quarter, if larger.
- While the potatoes are cooking, fry the bacon until very crisp. Remove from the pan and discard all the fat except 1 tablespoon. Heat the remaining fat and add the celery and onion. Season and sauté for 2-3 minutes. Add the vinegar, water, sugar and mustard. Simmer for about 5 minutes, or until syrupy.
- Pour over the warm potatoes and gently toss. Add the parsley and toss again. Taste for additional seasoning and serve warm with the sausages.
