Plum and apple compote

Juicy, sweet-sour plums are perfect for turning into a vibrant winter compote. Stew down with apples, soft brown sugar, vanilla and almond extracts, and pair with granola and yogurt for a deliciously fruity breakfast. Keep chilled in the fridge for a week and enjoy extra special breakfasts all week long.

Ingredients

  • 800g Bramley cooking apples, peeled, cored and roughly chopped
  • 500g plums, halved and stoned
  • 50g dark soft brown sugar
  • 1 tsp vanilla extract
  • 1 tsp almond extract

Method

  1. Put all the ingredients in a saucepan with 50ml water. Bring to a simmer over a low heat and cook, covered, for 45 mins until the apples have begun to break down.
  2. Remove the lid and stir well to break down any remaining chunks of fruit.
  3. Make this up to 3 days in advance, to give the flavours a chance to develop. Serve warm or cold with granola and yogurt, if you like. Any remaining compote will keep, chilled, for a week.
