Plum and apple compote recipe


Juicy, sweet-sour plums are perfect for turning into a vibrant winter compote. Stew down with apples, soft brown sugar, vanilla and almond extracts, and pair with granola and yogurt for a deliciously fruity breakfast. Keep chilled in the fridge for a week and enjoy extra special breakfasts all week long.

Ingredients
- 800g Bramley cooking apples, peeled, cored and roughly chopped
- 500g plums, halved and stoned
- 50g dark soft brown sugar
- 1 tsp vanilla extract
- 1 tsp almond extract

Method
- Put all the ingredients in a saucepan with 50ml water. Bring to a simmer over a low heat and cook, covered, for 45 mins until the apples have begun to break down.
- Remove the lid and stir well to break down any remaining chunks of fruit.
- Make this up to 3 days in advance, to give the flavours a chance to develop. Serve warm or cold with granola and yogurt, if you like. Any remaining compote will keep, chilled, for a week.
