One-tray hot dogs with wedges recipe

Here's a clever, easy way to cook a family favourite in one tray. The sausages have a spicy kick, but you can always swap them for plain sausages if you're cooking for little ones. Plus, there's leftover sausages and veg for a frittata the next day!

Ingredients
- 1kg sweet potatoes, cut into wedges
- 2 large red peppers, roughly sliced
- 3 tbsp olive oil, plus extra for roasting (optional)
- 2 tsp smoked paprika
- 3 onions, sliced
- 2 x 400g packs 4 Tesco Finest Pork, Red Leicester Cheese & Jalapeño Hot Dogs
- 1 tsp chopped fresh chives
- 4 white hot dog rolls, split
- 4 sliced gherkins, to serve (optional)
- ketchup, to serve (optional)
- mustard, to serve (optional)
- 4 tsp crispy onions (optional)

Method
- Preheat the oven to gas 7, 220°C, fan 200°C. Put the potatoes in a large bowl with the red peppers, 2 tbsp oil and the smoked paprika; season with black pepper. Mix well to coat, then transfer to a large baking tray, spacing out the potatoes. Bake for 10 mins.
- Put the onions and sausages in a second baking tray. Drizzle over the remaining 1 tbsp oil and mix well. Cook alongside the wedges for 25-30 mins, stirring every 10 mins, until the wedges are golden and tender, the onions are caramelised and the sausages are cooked through. You may need to add a little more oil to the wedges if they start to stick.
- Reserve 4 sausages and 300g of the potato-pepper mix for our sticky sausage frittata recipe. Add the rest of the potato-pepper mixture to a bowl and scatter with the chives.
- Divide the onions between the hot dog rolls and top with the sausages. Add a sliced gherkin to each then top with ketchup and mustard, if using. Sprinkle over the crispy onions, if using, and serve with the wedges.
