Mulled red cabbage recipe

Red cabbage is a classic Christmas side. Make it even more festive with the addition of cinnamon, star anise and cloves. This warming dish is full of flavour and a great accompaniment to your turkey and roast potatoes.

Ingredients
- 1 tbsp vegetable oil
- 1 red cabbage, about 1kg, sliced
- 1 tbsp light brown sugar
- 50ml red wine vinegar
- 200ml Tesco Pressed Apple Juice
- 1 whole star anise
- 1 cinnamon stick, broken in half
- 3 whole cloves

Method
- Heat the oil in a large saucepan over medium heat. Add the sliced cabbage and cook for 5 mins, stirring, until beginning to soften. Season with salt and black pepper and add the sugar, stirring until evenly coated.
- Pour over the vinegar and apple juice and add the star anise, cinnamon stick and cloves.
- Bring to a simmer, cover with a lid and reduce to a medium-low heat, cooking for 20-25 mins while stirring occasionally.
- Remove the lid and cook for another 10-12 mins until the liquid has reduced. Spoon into a warmed serving dish and remove the whole spices before serving.
