Linguine with salmon

This is a lovely, quick, healthy pasta dish – and one that less confident cooks can easily master. Heart-healthy salmon and courgette are gorgeous with a bit of crème fraîche, lemon and mint. It's bound to become a summer supper staple.

Ingredients

  • 30ml olive oil
  • 200g skinless salmon fillet, cubed
  • 300g linguini
  • ½ courgette, de-seeded and julienned
  • 2tbsp crème fraiche
  • salt
  • pepper
  • a few large mint leaves, finely sliced
  • juice of ½ lemon

Method

  1. Cook the linguine in a large saucepan of boiling, salted water for 8-10 minutes until 'al dente'.
  2. Meanwhile, heat theolive oilin a large frying pan set over a medium heat. Stir-fry the salmon for 4-5 minutes until just cooked, then stir through the courgette.
  3. Remove from the heat and set to one side. Drain the pasta and toss immediately with the courgette and salmon. Stir through the crème fraîche and season to taste with salt, pepper and lemon juice. Stir in themintleaves just before serving in bowls.
