Lettuce wraps with lime, coriander and spring onion quinoa

These tasty quinoa lettuce wraps make the perfect snack or light lunch and are crisp, crunchy and full of flavour. Mixing fluffy quinoa with zesty lime, fiery chilli and creamy soft cheese and wrapping in a fresh lettuce leaf gives a tasty bite that's sure to keep you satisfied.

Method

  1. Empty the quinoa and vegetable stock into a small pan and simmer, covered, for 15-18 mins, or until the stock has been fully absorbed. Set aside to cool for a few minutes.
  2. Stir the garlic, chilli, lime zest and juice, spring onions, coriander and soft cheese into the warm quinoa, until combined. Season with black pepper.
  3. Divide the quinoa between the lettuce leaves and top with the red pepper and a little extra coriander. Tuck in the ends of the lettuce and roll each one up, securing with a skewer or cocktail stick. Serve immediately.
