Lemon and yogurt marinade recipe

The secret of this yogurt marinade is the lactic acid and calcium that gently break down proteins to leave meat really tender. Leave it to work its magic for at least 8 hours, or up to 24 for the best results. This easy marinade recipe works really well with chicken thighs or any cut of chicken for that matter, and it comes together in just 15 minutes.

Ingredients
- 2 garlic cloves, minced
- 1 lemon, zest and juice
- 150g Greek-style yogurt
- 1 tsp olive oil
- 1 tsp salt

Method
In a bowl, combine the minced garlic, lemon zest and juice, Greek-style yogurt, olive oil, salt and a pinch of black pepper.
- Add your protein (chicken thighs are great here), mix until coated, then cover and marinate in the fridge overnight or for up to 24 hours.
- When you’re ready to cook, lift the protein out of the marinade, shaking to remove any excess, and fry until golden and cooked through. Discard the remaining marinade.
- To serve: This recipe is for the marinade only, so don't forget to buy your protein and veg. Fry until golden and cooked through.
