Griddled apricots with Madeira cake recipe

This delicious dish can be made on the barbecue in less than 10 minutes and combines classic teatime Madeira cake with exotic apricots to make a summer dessert packed with smoky, fruity flavours.

Ingredients
- 4 apricots, halved, stoned and cut into wedges
- 4 slices Madeira cake (250g in total)
- 4 tbsp soured cream
- clear honey, for drizzling
- fresh mint, chopped, to garnish
- flaked almonds, to garnish

Method
- Put the fruit and cake directly onto the barbecue bars. Cook for about 2 minutes on each side, until lightly griddled. Remove from the grill and set aside to cool slightly.
- Divide the cake between serving plates and spread each with 1 tbsp soured cream and some grilled apricots wedges. Drizzle with a little honey, then top with a drizzle ofhoney, some mint and a sprinkling of flaked almonds. Serve immediately.
