Madeira loaf cake

This easy Madeira cake recipe is a traditional basic bake, all made in one bowl and just lightly flavoured with lemon and ground almonds. Slice for a simple afternoon treat, serve with créme fraîche and berries for an elegant dessert or break up and use in a trifle.

Ingredients

  • 175g butter, softened, plus extra for greasing
  • 175g caster sugar
  • ½ tsp vanilla extract
  • 3 medium eggs
  • 1 lemon, zested
  • 200g plain flour
  • 1¾ tsp baking powder
  • 50g ground almonds
  • 1 tbsp milk

Method

  1. Preheat the oven to gas 5, 180°C, fan 160°C. Grease and line a 2lb loaf tin. In a large mixing bowl whisk together the butter, sugar and vanilla extract until pale and very fluffy. Whisk in the eggs one at a time. Add the lemon zest.
  2. Sift over the flour and baking powder, add the almonds and fold through using a large metal spoon. Stir through the milk to loosen the mixture a little.
  3. Pour the batter into the cake tin, level the top and bake for 45-50 mins (check after 40 mins – if the top is browning too much cover loosely with foil) until risen and an inserted tip of a knife comes out clean.
  4. Allow the cake to cool in the tin for 15 mins. Remove from the tin and allow to cool on a wire rack to cool completely.
