Greek-inspired lamb burger

Heat up the barbecue for this gorgeous Greek-style burger recipe made with Fire Pit lamb burgers topped with tomato, red onion, feta and a fresh cucumber salad. The herby yogurt dressing works well as a great dip for chips, too.

    Ingredients

    • 4 Fire Pit Brioche Buns
    • 4 Fire Pit Lamb Burgers
    • lettuce leaves, to serve
    • 1 tomato, sliced
    • 1 red onion, sliced
    • 120g feta, sliced

    For the salad

    • 1 cucumber, peeled into ribbons
    • 1 tsp poppy seeds
    • 1 tbsp oregano and mint leaves, chopped
    • handful black olives, roughly chopped
    • 2 tbsp olive oil

    For the yogurt dressing

    • 100g Greek yogurt
    • 2 tbsp mayonnaise
    • 1 tbsp chopped soft herbs, we used fresh dill and mint
    • 1 clove garlic, crushed

    Method

    1. To make the salad, toss together the cucumber ribbons with the poppy seeds, chopped oregano and mint leaves, black olives and olive oil. Season well.
    2. For the dressing, mix together the all the ingredients and season to taste.
    3. Cook the burgers according to pack instructions. Slice open each brioche bun and layer with lettuce leaves and tomato slices. Add the burger and top with feta, red onions, cucumber ribbons. Finish with a drizzle of dressing or serve with the dressing on the side.
