A tapas classic, pan-fried prawns are quick, easy and bursting with flavours of the Mediterranean. Known traditionally as 'gambas', a drizzling of fiery garlic butter brings this dish together. Best served with crusty bread to mop up any delicious, leftover juices.

Method

  1. Heat the oil in a frying pan over a medium-high heat. Add the crushed chillies and 1 crushed garlic clove and fry for 30 secs. Tip in the prawns and fry, stirring, for 3 mins or until pink and cooked through.
  2. Fold in the lemon juice, zest and half the parsley. Spoon onto a warmed, lipped serving plate and set aside.
  3. Melt the butter in the pan, then stir in the Worcestershire sauce, Tabasco and remaining crushed garlic. Spoon over the prawns, top with the remaining parsley and serve with crusty bread to mop up the juices, if you like.
