Elderflower matcha spritz recipe

Fresh and grassy matcha powder works beautifully with sweet and fragrant elderflower cordial in this interesting mocktail. It's vibrant, refreshing and something a bit different. Swap the soda water for prosecco if you want a cocktail.

Ingredients
- 1 tsp matcha powder
- ice cubes
- 50ml elderflower cordial
- 200ml soda water or prosecco
- 2 fresh mint sprigs

Method
- Put the matcha powder into a heatproof jug and whisk in 100ml boiling water; allow to cool completely.
- Fill 2 wine glasses with ice cubes. Mix the elderflower cordial and the cold tea together and divide between the glasses.
- Top each with the soda water (or prosecco) and garnish with a fresh mint sprig.
