Coffee and coconut milkshake

A frozen milkshake is the perfect summer treat and this coconut and coffee version with a hit of caffeine, will give you an energy boost too.

Ingredients

  • 3 tbsp demerara sugar
  • 4 shots espresso coffee
  • 400ml milk
  • 300ml coconut yogurt
  • 1 frozen chopped banana
  • mini marshmallows, to decorate
  • chocolate curls, to decorate

Method

  1. Dissolve demerara sugar in the shots of espresso coffee; leave to cool. In a blender, whizz the milk, coconut yogurt and banana, until thick and smooth.
  2. Pour into glasses, then drizzle over the coffee mixture and stir to combine. Top with mini marshmallows and chocolate curls.
