Cod and sweetcorn chowder recipe

Chowder often goes down well with toddlers – there’s something about the warming, milk base and the soft veg with flaky fish that they love. Plus, adults can easily add a touch more texture and flavour with a crispy bacon topping or croutons. Try with our homemade bagels (see tip) for dipping.

Ingredients
- ½ tbsp olive oil
- 1 onion, finely chopped
- 1 large carrot, peeled and finely chopped
- 3 garlic cloves, finely chopped
- 350g potatoes, peeled and cut into 1cm cubes
- 500ml whole milk
- 360g frozen cod fillets
- 1 tbsp fresh parsley, roughly chopped
- 250g frozen sweetcorn
- 2 spring onions, finely chopped to serve (optional)
- ½ tbsp finely chopped fresh chives, to serve (optional)
- crusty bread or homemade bagels, to serve

Method
- Heat the oil in a large heavy-based saucepan and fry the onion and carrot for 8-9 mins until soft and lightly golden, then add the garlic and cook for a further 1 min. Add the potatoes, milk and 200ml water and simmer very gently for 5 mins.
- Add the cod and continue to simmer for another 10 mins, then break the cod up into large chunks with a spoon. Add the parsley and the sweetcorn and cook for another 5 mins until tender and the cod is cooked through.
- Take a spoonful of the cod, potatoes and sweetcorn out and put on a plate. Blitz the remaining chowder with a stick blender until mostly smooth, then stir the reserved fish and vegetables back in (you can blitz the whole thing if you prefer). Stir in the spring onions and chives, if using, and serve with crusty bread or our homemade 3-ingredient bagels.
