3-ingredient bagels recipe

Toddlers often love toast or bagels and this easy recipe is great for baking at home without the faff. Perfect for breakfast, lunch or out-and-about, you could top with cream cheese, nut butters, or make up as sandwiches. Or serve them as bagel pizzas: simply halve and top with tomato purée and grated cheese before grilling.

Ingredients
- 300g full-fat cottage cheese
- 200g self-raising flour, plus extra for dusting
- 1 egg, lightly beaten

Method
- Preheat the oven to gas 5, 190°C, fan 170°C. Put the cottage cheese into a food processor and blitz until smooth and no lumps remain.
- In a mixing bowl, stir the cottage cheese and flour together to make a sticky dough, then tip out onto a flour-dusted surface and knead for 2-3 mins until smooth and no longer sticky, adding extra flour if needed.
- Divide the dough into 80g pieces, then shape into balls and use your fingers to make a hole in the centre of each one. Gently stretch the hole out until at least 6cm wide, then place onto a baking tray lined with nonstick baking paper. Egg wash the tops and sides and bake for 30 mins, loosely covering with foil halfway through. Allow to cool completely on the tray.
- Tip: These can be cooked in the air-fryer in small batches in 10-12 mins.

Freezing and defrosting guidelines
