Nothing beats a homemade salsa and this recipe with juicy cherry tomatoes and the heat of red chilies, is a real crowd-pleaser. It's versatile enough to be served as an appetizer with a handful of tortilla chips or as a relish to spice up barbecued meats, chicken and fish.

Ingredients

  • 300g (10oz) cherry tomatoes, quartered
  • 1/4 small red onion, sliced into thin slivers
  • 1 plump red chilli, seeds removed (or leave some in if you like the heat), finely chopped
  • 1tbsp lime juice
  • 1 tbsp olive oil
  • ¼ tsp caster sugar
  • 1 rounded tbsp flat leaf parsley
  • 2 tbsp chopped basil

Method

  1. Tip the tomatoes into a bowl with the redonionslivers and choppedchilli. Pour over the lime juice and olive oil, then gently stir in the sugar, parsley and basil. Season with a little salt and pepper to taste.
  2. Goes well with barbecued meats, chicken and fish, or with tortilla chips as an appetizer.
