Cheesy carrot loaf recipe

Snacks and lunches are often the trickiest part of feeding a toddler. This throw-together loaf is a great solution for making in advance and taking out with you, or for packing into a lunchbox in place of sandwiches or expensive snacks. It’s also delicious toasted with a bit of butter or honey.

Ingredients
- 250g wholewheat flour
- 2 tsp baking powder
- 80g Cheddar, coarsely grated
- 2 large carrots, peeled and coarsely grated
- 2 medium eggs, lightly beaten
- 200g full-fat Greek-style yogurt
- 140ml vegetable or sunflower oil, plus extra for greasing

- Preheat the oven to gas 4, 180°C, fan 160°C. Grease and line a 900g loaf tin. In a large mixing bowl, stir together the flour and baking powder, then stir in most of the cheese and all the carrot.
- In a separate mixing bowl, whisk together the eggs, yogurt and oil, then stir into the dry mixture until just combined. Spoon into the prepared tin and gently smooth the top with the back of the spoon. Sprinkle the remaining cheese over the top, then bake in the middle of the oven for 1 hr or until golden and crusty on top and a knife inserted into the centre comes out clean.
- Allow to cool in the tin for 10 mins before removing from the tin and cooling on a wire rack. Enjoy warm or slice and freeze – see guidelines below.

Freezing and defrosting guidelines
Once cooled, wrap each slice in a layer of clingfilm and foil and freeze. Allow to defrost at room temperature before toasting.
