Delicious hot or cold, this sausage-and-beef plait celebrates all the flavours of a cheeseburger wrapped in buttery puff pastry. A twist on the classic picnic sausage plait, it combines beef mince with sausage meat, and uses ready-made pastry to keep things easy. Serve with a quick burger sauce and crisp salad, plus freeze any leftover slices for your next picnic – perfect!

Method

  1. Preheat the oven to gas 6, 200°C, fan 180°C; put a baking tray inside to heat up. Meanwhile, heat the oil in a saucepan over a medium heat. Add the onions, cover and gently fry for 10 mins, stirring occasionally, until softened. Cool for 5 mins.
  2. Stir the cooked onions, mince, sausage meat, breadcrumbs, parsley and 100g gherkins together until evenly mixed.
  3. Unroll the pastry on its paper and shape the meat filling down the middle, leaving a 4cm border at each end. Top with the cheese slices in a single layer. Cut diagonal strips down the length of both sides of the pastry, roughly 5cm apart. Fold the 2 ends over the filling, then plait alternate strips of pastry over the filling, overlapping and brushing with egg as you go. Trim and discard any excess.
  4. Brush with the remaining egg, then sprinkle with sesame seeds. Transfer to the tray and bake for 25 mins, then reduce the oven to gas 5, 190°C, fan 170°C and cook for a further 25 mins until cooked through. Cool for 10 mins.
  5. Meanwhile, mix together the burger sauce ingredients with the remaining 50g gherkins.
  6. Slice the plait, drizzle with the burger sauce, and serve with the lettuce and tomatoes.
  • Tip: Keep leftovers in an airtight container in the fridge for up to 3 days.
  • Freezing and defrosting guidelines

    Freeze at the end of step 3 for up to 3 months. Defrost overnight in the fridge before cooking as step 4. Freeze the cooked plait whole or in slices.
