    Method

    1. In a bowl, mix the tikka masala powder with the gingerand garlic paste and set aside. Heat the ghee in a large, deep frying pan over a medium heat. Add the onion. Cook, stirring, for 3-4 minutes or until softened.
    2. Add the chickenpieces. Cook, stirring, for 5 minutes or until browned, then add the tikka, ginger and garlic paste. Cook, stirring, for 1 minute more or until fragrant.
    3. Add the tomatoes and the cream and bring to the boil. Reduce heat to low and cook, stirring occasionally, for 10 minutes or until the chicken is cooked through with no pink showing. Add the spinach.
    4. Cook, stirring, for 2 minutes or until the spinach has wilted. Serve with steamed rice and yoghurt, and garnish with the coriander.
