Charred cabbage wedges with miso butter recipe

Here’s a delicious idea with sweetheart cabbage that really shows off its sweet flavour. Pan-fried, roasted and pan-fried again with a miso butter, this adventurous side is totally worth the effort. Finish with fresh chilli, coriander and toasted sesame seeds for a final hit of flavour. Serve with a roast or some pan-fried chicken or fish.

Ingredients
- 1 tbsp olive oil
- 2 sweetheart cabbages, tatty outer leaves removed, halved lengthways
- ½ tbsp sesame seeds
- 80g butter, at room temperature
- 3 tsp white miso paste
- 1 lime, zested and juiced
- 8g fresh coriander, leaves picked, stalks finely sliced
- ½ red chilli, finely sliced

Method
- Preheat the oven to gas 7, 220°C, fan 200°C. Heat the oil over a medium heat in a large frying pan. Working in two batches, fry the cabbage halves, cut-side down, for 5 mins until dark golden. Transfer to a roasting tray, cut-side up, and roast in the oven for 25-30 mins until lightly charred and tender.
- Meanwhile, wipe the pan clean and toast the sesame seeds over a medium heat for 4 mins, stirring occasionally, until lightly golden. Tip into a bowl and set aside.
- Beat the softened butter with the miso paste, lime zest and juice and coriander stalks until smooth and combined.
- Once the cabbages are roasted, return the pan to a medium heat and melt the miso butter. When bubbling, add the cabbage halves to the pan, cut-side down, turning the cabbages as you baste with the miso butter for 3-4 mins until golden and coated.
- Serve immediately, scattered with the chilli, toasted sesame seeds and coriander leaves.
