Cajun bean and feta burgers recipe

Packed with beans, Cajun spice and feta cheese, this flavour-filled vegetarian burger makes for a delightful dish that will fuel the whole family.

Ingredients
- 1½ tbsp olive oil
- 1 small red onion, finely chopped
- 1 garlic clove, crushed
- 1 green chilli, seeded and finely chopped
- 2 tsp Cajun seasoning
- 2 x 400g tins mixed beans or cannellini beans, drained, rinsed and roughly crushed
- ½ lime, juiced
- 50g fresh breadcrumbs
- 75g feta, crumbled
- small handful flat-leaf parsley, finely chopped
- 1 egg, lightly beaten
- 4 white floury rolls, split and toasted
- 1 avocado, sliced
- soured cream, to serve
- rocket, to serve

Method
- Heat ½ tbsp oil in a frying pan. Add the onion and cook for 5 minutes or until softened.
- Add the garlic, chilli and Cajun seasoning; cook for 1-2 minutes. Spoon the mixture into a bowl. Add the beans, lime juice, breadcrumbs, feta, parsley, and just enough beaten egg to bind everything together. Season and mix well. Divide the mixture into 4 and shape into patties. Chill for 15 minutes.
- Heat the remaining oil in the pan over a medium heat. Cook the burgers for 4-5 minutes on each side, until cooked through. Serve in the rolls, topped with the avocado, soured cream and rocket.
