Buffalo cauliflower and blue cheese pizzas

Ingredients

  • 2 x 145g packs pizza base mix
  • 1 tsp olive oil, plus extra for greasing
  • 2½ tbsp tomato purée
  • 1-2 tbsp chilli sauce (such as Frank's or sriracha)
  • 1 tsp paprika
  • 2 tsp clear honey
  • 100g grated mozzarella
  • 100g bunch spring onions, trimmed and halved lengthways
  • 200g cauliflower florets, thinly sliced
  • 100g vegetarian hard blue cheese, broken into small pieces
  • 5g chives, snipped

Method

  1. Make the pizza base mixes to pack intructions. Roll out each to a 24cm circle. Transfer to greased baking sheets and set aside for 10 mins to prove.
  2. Preheat the oven to gas 7, 200°C, fan 200°C. Mic together the tomato purée, chilli sauce, oil, paprika and 1 tsp honey; season. Divide between the pizza bases, spreading to cover. Top with mozzarella, spring onions, cauliflower and blue cheese.
  3. Bake for 15-20 mins until golden brown and cooked through. Drizzle with the remaining honey and sprinkle over the chives to serve.
