Brie, grape and cranberry baguettes

A great picnic sandwich to pack for the adults, this Brie, grape and cranberry baguette recipe makes use of sweet and savoury flavours for the perfect satisfying bite. Slather cranberry sauce on a soft French stick, then stuff with bitter leaves, Brie and seedless grapes for a great lunch on-the-go.

Ingredients

  • 1 baguette, ends removed and halved lengthways
  • 4tbsp cranberry sauce
  • 2tbsp mayonnaise
  • 1 head red or white chicory, leaves separated or large handful lambs lettuce
  • 150g (5oz) Brie, sliced
  • 100g (31⁄2oz) black seedless grapes, halved

Method

  1. Slice the baguette in half lengthways: spread the bottom half with cranberry sauce and the top half with mayonnaise.
  2. Arrange the chicory leaves over the cranberry layer and top with the Brie and grapes. Sandwich the halves and cut into 6 pieces.
