Breakfast crumpet burger

All your breakfast favourites, sandwiched between two toasted crumpets. This burger is quick and easy to put together and makes an excellent breakfast stack.

    Ingredients

    • 4 Tesco hash browns
    • 250g Tesco Finest mixed baby tomatoes
    • 1 tbsp olive oil
    • 4 sausages
    • 4 free range large eggs
    • 8 Tesco crumpets
    • 2 avocados, de-stoned and sliced
    • 40g rocket

    Method

    1. Preheat the oven to gas 7, 200°C, fan 200°C. Put the hash browns and cherry tomatoes on a baking tray,drizzle the tomatoes with the olive oil and place in the preheated oven to cook for 18-20 mins. Check the tomatoes after 12 mins, they should be just blistered. Take them out as soon as they are slightly charred/blistered. The hash browns will be golden and crispy after 18-20 mins.
    2. While they are cooking, prepare the sausage patties. Remove the meat from the casings and press each into a patty shape to fit a crumpet base.
    3. Heat a frying pan over a medium heat and fry the patties for 2-3 mins a side until cooked through.
    4. In a seperate pan, fry the eggs over a medium high heat for 2-4 mins, depending on how you like them done. For easy over, flip the egg for the last 30 secs of cooking.
    5. To serve, toast the crumpets according to packet instructions. Lay the slices of avocado on the base, top with the sausage patty, then the hash brown, an egg and the tomatoes. Sprinkle over the rocket to finish. Serve immediately.
