Bread Upma recipe

Upma is a traditionally south Indian breakfast, but is so simple and versatile it can be a lunch or snack too. Try this take on it using cubes of bread and whichever fresh veggies that you have to hand

Ingredients
- 8 bread slices
- 100g (3 ½ oz) mixed vegetables of your choice (carrot, cauliflower florets, peas, potato) – parboiled
- 1 onion, finely chopped
- ½tsp turmeric powder
- ½tsp red chilli powder
- 1 green chilli, slivered into long pieces
- 1tsp cumin seeds
- 2tbsp vegetable oil
- 1tbsp fresh coriander leaves, finely chopped
- 1tbsp fresh lemon juice
- salt

- Cut the bread into 2.5cm (1in) square pieces. Heat the oil in a flat bottomed pan and add the cumin seeds. Once they start turning brown, add the chopped onions and sauté until golden brown.
- Toss in the green chilli pieces, parboiled vegetables and add the turmeric powder. Now add the cut bread pieces and sprinkle the chilli powder and salt evenly.
- Toss the contents in the pan and sprinkle little water and allow it to cook on medium flame for about 5-6 minutes, until the bread pieces become golden and crusty. Put off the flame, add the fresh lemon juice and coriander leaves. Serve hot.
