Boozy strawberries and cream

Our favourite summer berries are given a boozy lift in this decadent dessert recipe, offering a grown-up twist on the classic Wimbledon staple.

Ingredients

  • 300g (10oz) strawberries, hulled and quartered
  • 50ml (2fl oz) orange liqueur (such as Cointreau)
  • 1 tbsp demerara sugar
  • 300ml (1/2 pint) whipping cream
  • 1 tbsp icing sugar
  • 100ml (3½fl oz) half-fat crème fraîche

Method

  1. Put the strawberries, orange liqueur and demerara sugar in a bowl and allow to marinate for at least 30 minutes and up to 4 hours.
  2. In a large bowl, whip the cream with the icing sugar until soft peaks form and then gently fold through the crème fraîche. Pile the cream high in serving bowls and top with the strawberries and marinating liquid.
