Blueberry and lemon fools

Make yourself a weekend treat with this quick and easy dessert, using only Tesco Finest ingredients. Bursting with tangy, fruity flavours and mellowed out with Greek yogurt and cool mint, this dessert is big on taste but low on cost.

Ingredients

  • 2 x 150g packs Tesco Finest blueberries
  • 1 tbsp caster sugar
  • 2 tbsp water
  • 1 tbsp finely chopped mint
  • 4 tbsp Tesco Finest 0% fat Greek yogurt
  • 1 tbsp Tesco Finest zesty lemon curd

Method

  1. Put the blueberries in a saucepan with the caster sugar, 2 tbsp water and 1 tbsp finely chopped fresh mint. Simmer over a medium heat for 5-6 mins until the blueberries are syrupy and soft but still holding their shape. Remove from the heat and allow to cool. Once cool, set aside 2 heaped tbsp blueberries.
  2. Spoon 4 tbsp Tesco Finest 0% fat Greek yogurt into 4 short glasses. Top with half the blueberry compote, then drizzle each with 1 tbsp Tesco Finest zesty lemon curd. Repeat with the remaining yogurt and blueberry compote. Drizzle another 1 tbsp lemon curd into each glass.
  3. To finish, divide the reserved blueberries between the glasses and garnish with extra mint leaves.
