Berry granola

Simple, tasty and long-lasting, this berry granola recipe is bursting with flavour and will store for up to two months. Loaded with juicy blueberries, sweet cherries and crunchy apple, this breakfast is one to look forward to in the mornings.

Ingredients

  • 350g porridge oats
  • 100g pistachios, roughly chopped
  • 50g sunflower seeds
  • 3 tbsp coconut oil, melted
  • 5 tbsp honey
  • 90g dried blueberries
  • 90g dried cherries, chopped
  • 90g dried apple

Method

  1. Preheat the oven to gas 4, 180°C, fan 160°C.
  2. In a bowl, combine the porridge oats, pistachios and sunflower seeds. Pour the melted coconut oil over the top; mix. Tip onto a lined baking sheet and drizzle with the honey.
  3. Bake for 30 mins, stirring a few times for even toasting.
  4. Stir in the blueberries, cherries and apple. Set aside to cool, then transfer to an airtight container. It'll keep for up to 2 months.
