Berry and yogurt granola pots

Once you start making your own granola, you won't look back. Apple juice, honey and ground cinnamon are mixed with oats and almonds. Serve with seasonal berries of your choice and yogurt mixed with honey.

Ingredients

For the granola

  • 50ml (2fl.oz) apple juice
  • 3tbsp clear honey
  • 1/2tsp ground cinnamon
  • 125g (4oz) jumbo rolled oats
  • oil, for greasing
  • 25g (1oz) blanched almonds, sliced

To serve

  • 500g (1lb) tub fat-free yogurt
  • 300g (10oz) seasonal berries, such as raspberries, strawberries and blueberries
  • 1-2 tsp clear honey (optional)

Method

  1. Preheat the oven to gas 4, 180°C, fan 160°C. Mix together the apple juice, honey and cinnamon in a bowl. Then stir in the oats until well coated. Lightly grease a shallow baking tray and tip the oats out onto it. Bake in the oven for 10 minutes. Then add the almonds and stir to break up any large clumps. Cook for another 5–10 minutes until golden and crisp. Leave to cool.
  2. To assemble, stir the honey into the yogurt (if using). Put the fruit in a glass or bowl, then spoon over the yogurt and top with the granola.
