Bacon and kale one-pot pasta

Eating your greens is easy with this simple pasta dish that's attractive to look at and delicious to eat. Smoky bacon, chilli, garlic and lemon provide the flavour, while soft linguine and wilted curly kale provide the texture. Finish with some Parmesan shavings, if you like.

    Ingredients

    • 50g butter​
    • 150g smoked streaky or back bacon, cut into 1-2cm dice
    • 1 onion, finely diced
    • 4 garlic cloves, crushed​
    • 300g linguine or spaghetti
    • 1 reduced-salt chicken stock cube, made up to 1 ltr
    • 180g pack curly kale, thick stems removed
    • ½ lemon, zested and juiced
    • ½ tsp crushed chillies
    • Parmesan or grana Padano shavings, to serve (optional)

    Method

    1. Melt the butter in a large, lidded pan wide enough for the linguine to lie pretty much flat. Gently sizzle over a low-medium heat for 8 mins, scraping the bottom of the pan frequently to stop it sticking, until the butter is well browned but not burned.
    2. Add the bacon and fry for 5-6 mins until browned and crisp. Remove with a slotted spoon and set aside on a plate lined with kitchen paper. Add the onion and garlic to the pan and fry for 8 mins until softened. Season with black pepper and a little salt.
    3. Add the linguine and stock, making sure most of the pasta is submerged. Cover, bring to a low simmer and cook for 15 mins, stirring occasionally, until the linguine is tender but still has a little bite.
    4. Stir through the kale (add a little extra water if it anything’s sticking to the bottom of the pan; there should be just enough liquid to coat the pasta) and put the lid back on. Cook for a further 5 mins until the kale is wilted and soft. Stir through the bacon, lemon juice and crushed chillies. To serve, scatter with the lemon zest and Parmesan shavings, if using.
