Method
- Mix the plain flour and cornflour together in a bowl until evenly combined. Working in batches, toss the prawns and cod in the flour mix until evenly coated.
- Place the cod and prawns on the shelf of the air-fryer in a single layer, brush or spray all over with oil and cook at 200°C for 8-10 mins until crisp, evenly golden and cooked throughout. Cook in batches, if needed.
- Meanwhile, in a bowl, mix together the mayonnaise, yogurt and crushed garlic together until smooth. Then, in another bowl, add the chopped garlic, parsley and lemon zest and mix together.
- Once cooked, pile the prawns and cod into a serving dish alongside the aïoli and sprinkle with the parsley gremolata. Serve with lemon wedges.
- Tip: To make this recipe without an air fryer, heat 2-3cm neutral oil in a deep frying pan over a medium heat. When the oil reaches 180°C (or a breadcrumb sizzles immediately when placed in the oil) carefully fry the fritto misto in batches, for 3-4 minutes until golden and crisp. Take care not to overcrowd the pan. Remove from the oil with a slotted spoon onto a plate lined with kitchen paper.
