20-minute homemade pizzas recipe

Pizza doesn’t have to be an unhealthy option. This homemade version uses just flour, baking powder and yogurt in the base; a mix that can also be made into flatbreads. Top with whatever you have at home – we’ve gone for peppers and sweetcorn but you know what your toddler’s faves are!
See method- Makes 2 pizzas (6 toddler servings, each pizza cut into 3)

Ingredients
- 100g wholemeal flour
- 125g self-raising flour, plus extra for dusting
- 1 tsp baking powder
- 200g Greek-style yogurt or thicker natural yogurt
- 45g tomato purée
- 1 tsp dried oregano
- 100g grated mozzarella
- any extra toppings of your choice

- Preheat the oven to gas 7, 220°C, fan 200°C. In a large mixing bowl, stir together the wholemeal flour, self-raising flour and baking powder, then stir in the yogurt with 2 tbsp water until a sticky dough forms.
- Dust a clean worktop with flour and knead the dough for 3 mins until smooth and slightly less sticky, adding more flour as needed. Divide the dough into two and shape into balls. Dust the worktop again and roll each piece of dough out to about 26cm in diameter.
- Mix the tomato purée and oregano together in a small bowl with 3 tbsp water until well combined.
- Heat 2 x 26cm nonstick and ovenproof frying pans over a high heat until almost smoking hot, then add one of the pizza doughs to each. (You can do this in batches if you only have one pan). Spread the sauce out over the centre of the dough, leaving a 1.5cm border, then scatter over the cheese. You can add any toppings of your choice at this point, too. Allow to cook for 4 mins before transferring to the oven for 7-8 mins until golden and bubbling. Allow to cool for a few mins before slicing and serving.
- Tip: To make flatbreads, divide the dough into 8 pieces and roll out to about 18cm in diameter. Cook for 3-4 mins on each side in a hot frying pan until golden and cooked through.
- Tip: You can make these gluten-free by using gluten-free self-raising flour but reduce the yogurt to 180g as it makes a wetter dough.
