Preparation and Usage

Place rosemary sprig and butter to one side.
Allow the lamb to rest for 30 minutes at room temperature before cooking.

Instructions: PAN FRYHeat a heavy based frying pan over a medium-high heat until hot. Place the lamb cannon in the pan, fat side down for 2 minutes then sear all remaining sided until lightly coloured. Transfer the lamb onto a baking tray, baste with the butter and add the sprig of rosemary.OVEN 190°C/Fan 170°C/Gas 5Place in the centre of a pre-heated oven for 16-18 minutes (medium) or 24-34 minutes (well done). Remove from the oven, loosely cover with foil and allow to rest for 3-5 minutes before carving.

Storage

Suitable for freezing. Ideally freeze as soon as possible after purchase but always by 'use by' date shown. Defrost thoroughly for a minimum of 24 hours in the fridge. Once defrosted use within 24 hours and do not refreeze. Follow the preparation guidelines above. Keep refrigerated. Once opened, consume within 1 day and by ‘use by’ date shown.
