William Drabble's children's mulled 'wine' jellies

Mulled wine is a favourite during the festive season; the spiced flavour and the warmth are perfect during cold winter days. There’s no reason why children can’t enjoy these delicious flavours too, and here William Drabble makes a child-friendly version. You could serve the liquid warm, as a drink, but this jelly recipe is also sure to be a hit with the kids.

    Ingredients

    • 200g (7oz) frozen mixed berries
    • 600ml (1pt) water
    • 9 orange segments
    • 1/2 cinnamon stick
    • 80g (2 3/4oz) caster sugar
    • 6 gelatine leaves

    • blackberries (optional)
    • redcurrants (optional)

    Method

    1. First, add 3 orange segments to a pan along with the water, berries, cinnamon and caster sugar.
    2. Bring to the boil and then cook for 2 minutes. Take the pan off the heat and leave to infuse for a minimum of 30 minutes and not longer than 1 hour. Strain the mixture and set aside.
    3. Add your choice of fresh berries to this. You can warm this up and serve as a child-friendly version of mulled wine.
    4. For the jelly, soften the 6 leaves of gelatine in water. Ensure you use cold water, to prevent clumping during the next stage. Then add the hot berry liquid and whisk until the gelatine has dissolved completely.
    5. At the bottom of each bowl or glass, place an orange segment. Divide the berry liquid between the bowls and allow to set in the fridge for 3-4 hours. Every now and then, check on the jellies – let the kids get involved by letting them test how wobbly the jelly is by gently pressing a clean finger against it.
    6. Remove the jellies from the fridge once they have set. Finely grate some ice over the top, or add some blackberries and redcurrants and dust with icing sugar before serving, if you wish.
