Waldorf salad

Originating from New York, this classic American Waldorf salad recipe is great for a healthy lunch or simple side dish. Toss celery, apple, grapes and walnuts through peppery rocket and chicory, and drizzle with a quick lemon and mustard yogurt dressing. You can swap for dairy-free yogurt, if you like.

Ingredients

For the dressing

  • 150g (5oz) natural yogurt
  • 3 tbsp lemon juice
  • 1½ tbsp Dijon mustard

For the salad

  • 2 celery sticks, sliced diagonally
  • 2 apples, cored and sliced into wedges
  • 200g (7oz) red grapes, halved
  • 100g (3½oz) walnut halves
  • 2 x 70g packs rocket leaves
  • 1 x 270g pack chicory, leaves separated

Method

  1. First make the dressing. Mix all the dressing ingredients together and season to taste.
  2. Now toss all the salad ingredients in a serving bowl, then drizzle over some of the dressing, serving the rest of the sauce on the side for people to add as needed.
