Waldorf salad recipe

Originating from New York, this classic American Waldorf salad recipe is great for a healthy lunch or simple side dish. Toss celery, apple, grapes and walnuts through peppery rocket and chicory, and drizzle with a quick lemon and mustard yogurt dressing. You can swap for dairy-free yogurt, if you like.

Ingredients
For the dressing
- 150g (5oz) natural yogurt
- 3 tbsp lemon juice
- 1½ tbsp Dijon mustard
For the salad
- 2 celery sticks, sliced diagonally
- 2 apples, cored and sliced into wedges
- 200g (7oz) red grapes, halved
- 100g (3½oz) walnut halves
- 2 x 70g packs rocket leaves
- 1 x 270g pack chicory, leaves separated

Method
- First make the dressing. Mix all the dressing ingredients together and season to taste.
- Now toss all the salad ingredients in a serving bowl, then drizzle over some of the dressing, serving the rest of the sauce on the side for people to add as needed.
