Turkey sarnie

Nothing can beat a leftover turkey sarnie with cranberry sauce. This is made even more indulgent with the addition of Brie cheese and mayonnaise. Enjoy!

    Ingredients

    • 3 slices brown or white bread
    • 1 tbsp cranberry sauce
    • 1 tbsp light mayonnaise
    • 1 tsp unsalted butter, softened
    • 40g (1 1/2oz) Cornish Brie, thinly sliced
    • 1 tbsp roasted salted pistachio nuts
    • 75g (3oz) turkey breast, sliced
    • 5g peppery baby leaf rocket salad

    Method

    1. Lightly toast the bread. Spread one slice with the cranberry sauce, one slice with the mayonnaise and one slice with the butter.
    2. Top the cranberry sauce with the Brie, then top the mayonnaise with a scattering of pistachios, the turkey slices and a handful of salad leaves.
    3. Place the slice of buttered toast on top of the salad leaves, then carefully place the Brie and cranberry slice over the plain toast.
    4. Cut in half and secure with cocktail sticks to serve.
