Method
- Heat the oil in a large lidded, heavy-based pan over a medium heat. Add the onion and cook for 5-10 mins until softened. Add the garlic, ras el hanout, orange zest and crushed chillies and cook for 2 mins until fragrant. Season.
- Add the chorizo, tomatoes, chickpeas, stock and olives. Bring to the boil, then cover with the lid and simmer for 35-40 mins. Top up with a little hot water if it begins to thicken too much.
- Stir through the spinach and leftover turkey and simmer for 5 mins until the spinach has wilted and the turkey is heated through. Finish with chopped coriander. Serve with rice or crusty bread, if you like.
- Tip: This stew is also perfect for leftover roast veg such as carrots, sprouts and butternut squash. Roughly chop and stir through with the spinach and turkey to heat through.
- Tip: You could also use this stew to make a spicy turkey pie. Spoon the mixture into an ovenproof dish and top with ready rolled puff pastry. Brush with beaten egg and bake in the oven at gas 6, 200°C, fan 180°C for 30 mins until golden and puffed.
