Tomato and halloumi puffs

An easy, cheesy canapé or snack, these little tomato and halloumi tarlets are perfect for serving at your next party. Needing just a few ingredients and using ready-made puff pastry, they are quick to throw together, veggie-friendly and tasty, too.

Ingredients

  • 500g puff pastry
  • 150g cherry tomatoes, cut in half
  • 1 tbsp olive oil
  • 250g savoury halloumi cheese, cut in half and then sliced
  • 2 sprigs fresh thyme, leaves removed
  • 3 fresh sage leaves, roughly chopped

Method

  1. Preheat oven to gas mark 6, 200ºC, fan 180ºC. Roll out the pastry and cut into 6cm squares. Place on baking sheets lined with nonstick baking paper. Using a knife, lightly score a boarder around each square – about 1cm from the edge.
  2. In a bowl toss together the tomatoes, oil, cheese, seasoning and herbs. Place a slice of cheese and half a tomato in the centre of each square. Bake in the preheated oven for 15-20 minutes until risen and golden brown. Serve warm.
