Tomato and halloumi puffs recipe

An easy, cheesy canapé or snack, these little tomato and halloumi tarlets are perfect for serving at your next party. Needing just a few ingredients and using ready-made puff pastry, they are quick to throw together, veggie-friendly and tasty, too.

Ingredients
- 500g puff pastry
- 150g cherry tomatoes, cut in half
- 1 tbsp olive oil
- 250g savoury halloumi cheese, cut in half and then sliced
- 2 sprigs fresh thyme, leaves removed
- 3 fresh sage leaves, roughly chopped

Method
- Preheat oven to gas mark 6, 200ºC, fan 180ºC. Roll out the pastry and cut into 6cm squares. Place on baking sheets lined with nonstick baking paper. Using a knife, lightly score a boarder around each square – about 1cm from the edge.
- In a bowl toss together the tomatoes, oil, cheese, seasoning and herbs. Place a slice of cheese and half a tomato in the centre of each square. Bake in the preheated oven for 15-20 minutes until risen and golden brown. Serve warm.
