Carrot, courgette and halloumi burgers recipe

Ingredients
- 1 large carrot, grated
- 1 large courgette, grated
- 225g halloumi, grated
- 2 spring onions, finely chopped
- 90g breadcrumbs
- 1 tbsp ground cumin
- 1 tbsp ground coriander
- ½ tsp salt
- 2 eggs
- 2 tbsp flour
- 4 brioche buns, halved
- 50g baby spinach leaves
- 1 large tomato, sliced
- 1 small red onion, sliced
- ½ cucumber, peeled into ribbons
- tzatziki, to serve

Method
- Put the courgette in a clean tea towel and squeeze tightly to remove any liquid. Tip into a large bowl and add the carrot, halloumi, onion, breadcrumbs, cumin, coriander, salt, eggs and flour. Stir well to combine.
- Put just over half the mixture in a food processor and pulse until the mixture starts to stick together. Return this back to the reserved mixture and mix well.
- Divide the mixture into 4 and shape into patties. Heat a barbecue or griddle pan to a medium heat. Cook the burgers for 4-5 mins each side or until golden and cooked through.
- Add the burger buns to the barbecue until lightly toasted. To assemble the burgers, place spinach leaves on the bottom of each bun. Top with the burger, a slice of tomato, cucumber ribbon and a spoonful of tzatziki.
