Sweet potato shoestring fries

  • 2 large sweet potatoes, peeled
  • 1 tbsp olive oil

Method

  1. Preheat the oven to gas 2, 150°C, fan 130°C. Using a julienne peeler or a spiralizer, cut the sweet potatoes into long, thin curls or strips (if you don’t have a julienne peeler or a spiralizer use a knife instead).
  2. Coat in the oil and lay out in a single layer on 2 large baking trays and sprinkle with salt. Bake for 40-45 mins or until the fries are crisp and golden. Allow to cool and serve.
