Ingredients

  • 4 x 250g (8oz) sweet potatoes
  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 1 x 500g pack lean steak mince
  • 1 tsp cinnamon
  • 75g (3oz) pitted black olives, sliced
  • 1 x 240g pack baby leaf spinach
  • 100g (3 1/2oz) feta, crumbled
  • 3 tbsp flat-leaf parsley, chopped

Method

  1. Preheat the oven to gas 6, 200°C, fan 180°C. Put the potatoes on a baking tray and cook for 40 minutes, or until tender.
  2. Meanwhile, heat the oil in a large frying pan over a medium-high heat. Add the onion and cook for 5 minutes, until softened, adding the garlic for the last 2 minutes.
  3. Stir in the mince and cook for 10 minutes, until browned, then add the cinnamon, olives and spinach. Cook for 5 minutes, or until the spinach has wilted, then stir in the feta and parsley. Halve the potatoes lengthways and serve with the mince filling.
