Ingredients

  • 2 nectarines, sliced into thin wedges
  • 2 plums, sliced into thin wedges
  • 2 peaches, sliced into thin wedges
  • 1/2 cabbage, sliced into thin strips
  • 1 tsp root ginger, grated
  • 2 spring onions, minced
  • 1 garlic clove, minced
  • 1 tsp rice wine vinegar

Method

  1. Slice the fruits into thin wedges and the cabbage into thin strands and combine in a bowl. Mix in the ginger, spring onions andgarlicand drizzle over the vinegar. Leave to marinate for 30 minutes before serving to soften the fruit and cabbage in the vinegar.
